Pumpkin and Caramel Cake

  • 1 yellow cake mix
  • 1 can of canned pumpkin
  • ¼ tsp. Self rising flour
  • 1/2 tsp. Heavy cream
  • 1/3 tsp. oil
  • 3 eggs
  • 1 teaspoon pumpkin pie spice

Combine all ingredients and bake in greased and floured cake pans until done at 350 degrees. I prefer to use 8 inch round pans to get more height. After the cake is totally cooled, cut each layer into 2 layers. (Dental floss works great for this!)

Salted Caramel Buttercream Frosting

  • 2 bed. softened butter
  • 2 t. vanilla flavor
  • 2/3 tsp. caramel filling
  • Pinch of salt
  • 2-4 T heavy cream
  • 2 cans of powdered sugar

Beat butter using a mixer until fluffy, add vanilla, caramel topping and salt until combined. Add the powdered sugar on low speed. Add the desired amount of cream to obtain the desired consistency. Beat on high 2 minutes or until mixture is light and fluffy.

Top with caramel topping and candied pecans.

candied pecans

  • 1/3 tsp. White sugar
  • 1 t. ground cinnamon
  • 1/4 t. salt
  • 1 large egg white
  • 1 T of water
  • 1 lb pecan halves

Combine cinnamon sugar and salt in a small bowl. Whisk egg white and water in a large bowl until frothy. Toss pecans into egg white mixture to coat. Pour sugar mixture over pecans and toss until evenly coated. Spread evenly on a baking sheet (parchment paper). Bake for 30 minutes in an oven at 250 degrees. Stir and rearrange the pecans every 10 minutes.

1 large pumpkin (no jack-o-lantern pumpkins)

Preheat the oven to 400 degrees and line a baking sheet with parchment paper. Cut the pumpkin in half, remove the seeds and place the cut side down on the baking sheet. Roast for 40 to 60 minutes or until the flesh is tender and the fork slides easily. Leave to cool for about 1 hour. Use your fingers to peel the flesh from the skin and place it in a food processor.

Kesar pistachio cupcakes

Ingredients

Maida 110g; baking powder ½ tsp; salt; 8-10 strand saffron; pistachio 25 g; suspended curd 120 g; powdered sugar 75 g; vegetable oil (odorless) 50 ml; baking soda 1/4 tsp. apple cider vinegar/plain vinegar 1/2 tsp. For the buttercream icing: unsalted butter (room temperature) 100g; icing sugar 100 g; cream 1 tbsp; a few sprigs of saffron

directions

Preheat the oven to 180°C. Sift together the flour, baking powder and salt. Add the saffron and pistachio. Keep it aside. Whisk together the suspended curds and sugar with an electric hand mixer until smooth, then stir in the oil, baking soda and vinegar and whisk for another minute. Let the mixture stand for 5 minutes then stir in the dry mixture. Divide cupcakes evenly into pans and bake for 15-20 minutes until puffed and lightly golden or until fully cooked. Test with a toothpick. Remove to a cooling rack and let cool. For the saffron buttercream: beat the butter with an electric hand mixer for about 5-6 minutes until smooth and fluffy. Add the icing sugar and stir, then beat until well combined. Continue with fresh cream and saffron. Transfer to a piping bag fitted with a nozzle of your choice and pipe over the cooled cupcakes. Garnish with pistachio flakes, saffron strands and dried rose petals. Tastes best when frosting is cool. Eat them within 2-3 days of making.

Plain chocolate cupcakes

Ingredients

Maida 105g; caster sugar 80 g; baking soda ½ tsp; cocoa powder 15 g; oil 80ml; ½ cup milk; apple cider vinegar ½ tbsp; vanilla extract ½ tsp; For the glaze: Dark chocolate 125 g; fresh cream 100g

directions

In a bowl, take the maida, sugar, baking soda and cocoa powder. Sift them.

In another bowl, add milk and vinegar. Keep for 2-5 minutes, then add oil and beat the mixture. Preheat the oven to 180° Celsius and line your muffin tin. Now add the dry ingredient mixture to the three-part wet mixture and mix well. Now pour the batter into cupcake molds and bake for 20-25 minutes at 180° Celsius. Meanwhile, cut the chocolate into small pieces, heat the cream and pour it over the chocolate. Mix well and let stand for about 6 hours. Cool cupcakes completely and coat with chocolate frosting.

Moonlighting in an eye hospital and baking were Shaily Vyas’ life for more than two years. “Until I decided to quit work and dedicate myself to baking full time. Belgian Chocolate Truffle Cupcake

Ingredients

Maida 1½ cups; granulated sugar 2 cups; vanilla extract 2 tbsp. whole milk 1 cup; vegetable oil ½ cup; cocoa powder 1 cup; baking powder 1½ tsp; baking soda 1½ tsp; salt 1 tsp; hot coffee 1 cup; For the chocolate truffle ganache Crème fraîche 2-3 cups; dark chocolate 2 cups; cocoa powder 2 teaspoons; For decoration Piping bag; star-shaped nozzle; chocolate chips/chips

directions

Preheat the oven to 180° Celsius for 10 minutes. In a mixing bowl, add all the dry ingredients like flour, cocoa powder, baking powder, baking soda, and salt. Take another bowl, add whole milk and granulated sugar, stir until sugar is dissolved. Add the wet ingredients like vegetable oil, vanilla extract and hot coffee and mix. Pour the liquid mixture into the dry ingredients and mix everything in one direction. Take the cupcake tray/silicone cupcake liners and place the liners in it, then transfer the mixture to the cupcake liners. Make sure the liner is not filled. It should reach the halfway mark of the liners. Bake your cupcakes at 160° Celsius for 15 minutes. For the chocolate ganache: Pour the fresh cream into a clean container and boil it for 7 to 8 minutes, stirring constantly. Add the dark chocolate and cocoa powder and stir until the chocolate melts completely. Take the baked cupcakes out and let them sit at room temperature for 2-3 hours. Do the same for the ganache. Once both are at room temperature, take a piping bag, attach the star-shaped tip and transfer the chocolate ganache to it. Pipe the ganache over the cupcakes; decorate with chocolate chips.

In a recent TikTok, Cohen shows how to turn apples and honey into the star of a beautiful upside-down cake. According to the instructions he shared in the caption of the now-viral video, you start by lining a pan with apple slices, then top them with homemade syrup and sweet honey cake batter. Once baked and inverted onto a plate, you’re left with a visually stunning cake that looks a lot more complicated to make than it actually is. The hard part is making sure your perfectly arranged apples don’t stick to the bottom of the pan when you flip it over, and you shouldn’t have any issues with that as long as you use enough cooking spray.

However, it’s not just the cute pinwheel design that makes this dessert worth baking. It is also the jammy apples and caramelized honey that melt and impregnate each crumb of the cake. It’s chewy and decadent, but by no means chewy, and the flavor is as smooth and rich as you’d hope for the new year ahead. Honey Apple Upside-Down Cake Perfect for Rosh Hashanah

Ingredients

  1. 3 Honeycrisp apples, cored and cut into 8 wedges each
    3/4 cup granulated sugar
    2 sticks of unsalted butter
    1 cup honey, plus more for garnish
    3/4 cup buttermilk
    2 large eggs
    1/2 cup packed dark brown sugar
    1 teaspoon vanilla extract
    2 cups all-purpose flour
    2 teaspoons kosher salt
    1 teaspoon ground cinnamon
    1 teaspoon freshly grated nutmeg
    1/2 teaspoon baking powder
    1/2 teaspoon baking soda
    Whipped cream, for garnish (optional)
    Non-stick cooking spray, for greasing

directions

  1. Preheat the oven to 350°F. Line a 9-inch round, high-sided cake pan with parchment paper cut to fit, then grease with cooking spray.
  2. Line the bottom of the prepared pan with apple wedges, arranging them in concentric circles, then arrange the remaining slices in the center.
  3. In a medium saucepan, mix the granulated sugar with 3 tablespoons of water. Cook over medium-high heat, shaking the pan as needed, until an amber caramel forms, about 6 to 8 minutes. Immediately pour the caramel over the apples in an even layer.
  4. In another medium saucepan, melt the butter over medium heat. Cook, stirring constantly, until golden brown and nutty in flavor, 6 to 8 minutes. Pour melted butter into a large heatproof bowl, cool slightly, then stir in honey, buttermilk, eggs, brown sugar and vanilla until smooth.
  5. In a medium bowl, whisk together flour, salt, cinnamon, nutmeg, baking powder and baking soda to combine. Add the dry ingredients to the wet ingredients, then fold until just incorporated.
  6. Pour the batter over the caramel coated apples. Bake 1 hour to 1 hour 10 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. Let cool in the pan for 15 minutes, then run a paring knife around the edge of the cake. Place a plate over the cake pan, invert them together, then lift the pan and remove the parchment paper.
  8. Top with whipped cream and drizzle with more honey if desired.

It seems that the North West love to slip into a soft Victoria sponge, while in the East Midlands the preference is for fruit-based creations like a Derbyshire Bakewell pie.

The study shows that Bristolians are fond of a slice of walnut and coffee cake.

The sponge cake is made with coffee, usually instant or “camp” coffee, accompanied by pieces of nuts. The cake is often filled with flavored buttercream frosting and topped with more buttercream frosting and walnut halves.

Caramel cake is also a popular choice in our region – a strong option if you don’t like or can’t have coffee.

Bristolians also enjoy a super sweet slice of caramel cake, according to the study.

Traditionally, this treat is made with layers of simple homemade cake topped with a creamy brown sugar caramel icing made on the stovetop with evaporated milk.

The study also found that 20% of people admit to eating cake every week and another 25% say they eat it 2-3 times a week.

Spicy lemon drizzle was universally popular across the country, while children enjoyed themed cakes based on their favorite television characters the most.

A renowned local bakery celebrates after becoming one of five Irish artisan food producers to win contracts under this year’s Grow with ALDI scheme.

This was certainly the ‘icing on the cake’ for Cully’s Bakery in Arva, Co Cavan, as their ‘Iced Cherry Log’ is also set to be part of ALDI’s award-winning basic range.

The five winners span the length and breadth of the country and include a wide range of products, from healthy snacks to delicious condiments.

Ambitious, creative and tenacious, the producers behind these tasty products each have a dynamic entrepreneurial spirit that makes them the ideal partner for ALDI.

The winners of Grow with ALDI 2022 are:

  • Cully’s Bakery by Co Cavan – The cherry glazed log created by Brían Cully is based on a traditional recipe passed down from generation to generation and retails for €2.99.
  • The Sibly Food Co by Co Cork – Handmade Energy Balls by entrepreneur Matthew Collins are not to be missed and come in two flavors for £4.49.
  • Hanley’s Puddings from Co Cork – This innovative Pudding Roulade is a combination of white and black pudding and is available for £2.19.
  • Vale & Acre from Co Tipperary – Delicious home-cooked sausage rolls made from fresh Irish whole pig retail at £2.99.
  • Builín Blasta Co Galway – Condiment lovers will delight in the Smoked Onion Mayo from the famous Gaeltacht cafe for just €3.79.

The Grow with ALDI Supplier Mentorship Programme, in conjunction with Bord Bia, supports Irish businesses and drives innovation.

The program underlines ALDI’s commitment to supporting Irish producers and sourcing quality Irish food products and making them available to consumers across the country at great prices.

This year, Grow with ALDI participants were invited to submit brave and bold proposals that would set them apart from the crowd. The successful finalists went through a rigorous and competitive judging process and with nearly 200 independent vendors applying to participate in the program, the competition was fierce. In May, ALDI supported the companies of 24 finalists to put their products on sale for a two-week period and today announced the five winners of the 2022 National and World Plowing Championships.

Each of the five winners will benefit from new contracts with the retailer. Two entrepreneurs, namely Brían Cully of Cully’s Bakery, Co. Cavan and Matthew Collins, founder of The Sibly Food, Co. Cork, have been awarded basic contracts. This means that their products will be part of ALDI’s award-winning core range.

Three more seasonal contracts have been awarded to winners Fiona O’Dwyer from Vale & Acre Co. Tipperary, Anthony Considine from Hanley’s Puddings Co. Cork and Heather Connolly from Builín Blasta Café Co. Galway.

Each of the five winning products is now available in 152 ALDI stores nationwide.

Speaking about the winning product launches, John Curtin, ALDI Group Purchasing Director, said: “At ALDI, we are committed to building and maintaining relationships with Irish suppliers. My family loves apple pie and apple crisp in the fall and all year round. I thought I’d switch things up and look up apple upside-down cake recipes. After looking at several, I put together this variation of Wegman upside-down apple cake with my personal touch.

I especially love the inclusion of pecans and cinnamon in this apple cake recipe. Note that this recipe does not include boxed cake mix, as some do. It’s a delicious classic dessert, but I also recommend it for breakfast! Try it with my homemade two-ingredient vanilla extract. For dessert, serve with a scoop of vanilla ice cream.

Ingredients


Here’s how to do it:


  1. Grease a 9 inch round cake pan. Add the brown sugar to the bottom.
  2. Pour 1/2 cup melted butter over brown sugar and sprinkle with 1/4 cup toasted pecans. Arrange the apple slices, rounded side down, on the sugar/pecan nut mixture.
  3. Sift together the flour, salt and baking powder. Put aside.
  4. Using a mixer with a whisk, combine the eggs and granulated sugar. Whisk over high heat until thick and light. Stir in vanilla and yogurt, then add flour mixture. Gently stir in remaining pecans until blended. Add a pinch of ground cinnamon. The mixture should resemble pancake batter.
  5. Using a spatula, spread the batter over the apples. Place the cake pan on a baking sheet. Bake in preheated 350 degree F oven for 60 to 65 minutes, or until a fork inserted in the center comes out clean. Let set for about 5 minutes before unmolding onto a serving platter.

Last year, @ramenasaidwow was one of many influencers to share a viral recipe on social media. Known as the dessert the user ‘built an entire business on’, with over a million likes it’s safe to say crispy cake recipe was and still is a hit among TikTok recipe collectors.

According to the video, you start by “creasing” two sheets of phyllo at a time, placing the crumpled logs back to back in a 9×11-inch baking dish. After baking for 10 minutes at 350 degrees, you then pour two sticks of melted butter over the pre-baked phyllo dough and bake for another 10 minutes. Above all, do not use more than two sheets of filo at a time, otherwise the layers will be too thick. Make a custard, pour this mixture over the dough and cook until crispy. The finishing touch includes a homemade simple syrup poured over the top. Sounds simple enough, right?

TikTokers seem to think so, as one claimed, “I tried and I can’t stop myself from doing it,” while another said, “I did that 3 times. I love that!” While there are tricks to spotting a bad TikTok recipe, @ramenasaidwow may be onto something with this cake recipe when you factor in the slew of positive comments.
