Handle The Heat explains that the remaining heat from the oven and baking dish will continue to bake the brownies — not entirely — but enough to achieve the perfect fudgy texture. So they’re not exactly undercooked, but the edges are a bit puffy while the center is still moist. How do you know when it’s time to take it out of the oven? One technique is to remove the brownies before the specific time suggested or to use the classic toothpick test.

After you stick the toothpick in the center of your batch of homemade brownies, you’ll see a speck of melted chocolate or wet crumbs. This is how you know your brownies are gooey – of course, let them set a bit before eating them, you don’t want to burn yourself on the first bite. Another great technique is to wiggle your pan after you take it out of the oven and notice if it wobbles a bit in the middle.

Don’t worry about the health risks, it’s not raw dough or undercooked food, just brownies with a gooier center. According to the CDC, eggs must be cooked to 160°F or higher to be safe to eat. This sweet treat tops fudge brownies with moist cheesecake, then swirls the two together. Here’s a trick to keep the layers flat and even: freeze the brownie batter in the pan for a few minutes before adding the cheesecake and baking. Add them to your Christmas dessert list (perhaps with some crushed peppermints on top for a festive touch) or enjoy anytime chocolate dessert cravings.

Do cheesecake brownies need to be refrigerated?

Any dessert containing a good amount of dairy, such as cream cheese, should be refrigerated in an airtight container once cooked and cooled. Luckily, these brownies taste even better when cold!

  1. Preheat the oven to 325°. Grease a 9 x 13 inch rectangular pan with cooking spray. Line the pan with parchment paper, leaving a 2-inch overhang on both sides. Grease the parchment with cooking spray.
  2. In a medium saucepan over low heat, melt the butter with the chocolate, whisking until smooth and completely melted. Stir in cocoa powder until smooth. Remove pan from heat and stir in brown sugar and 1 1/2 cups granulated sugar. Whisking constantly, add 5 of the eggs, one at a time, and mix until fully incorporated. Stir in 3 teaspoons of vanilla. Add flour and 1/2 tsp salt, and whisk until completely smooth; the mixture will be very thick. Reserve 2/3 cup brownie batter in a small bowl. Pour the rest of the batter into the lined pan, using a spatula to spread it into an even layer. Freeze the mold for 10 minutes.
  3. Beat cream cheese, remaining 1/2 cup granulated sugar, pinch of salt and remaining 1 1/2 teaspoons vanilla with an electric mixer on medium speed 30 seconds to 1 minute or until just combined. until they are completely incorporated and creamy. Beat sour cream until well blended. Add the remaining egg and mix until completely blended.
  4. Carefully pour cheesecake mixture evenly over cold brownie layer; spread into a smooth layer. Add milk to reserved 2/3 cup brownie batter, stirring until well blended. Spoon the brownie-milk mixture by random teaspoonfuls over the top of the cheesecake batter in the pan. Using a toothpick, skewer or paring knife, swirl the brownie mixture into the cheesecake mixture, being careful not to press too deeply and disturb the brownie layer.
  5. Bake for 50 to 55 minutes or until a wooden pick inserted in the center comes out clean (a few crumbs attached are enough). Cool completely on wire rack, about 3 hours. Cut into 16 bars.

Store brownies in an airtight container in the refrigerator for up to 3 days.

SEATTLE – Brownies are delicious on their own, but sometimes it’s fun to experiment when baking and switch things up!

Cookbook author Kat Lieu joined us to share a recipe for fudgy, gooey miso brownies that can be found in her book, “Modern Asian Baking at Home.”

MISO AND FUDGY BROWNIES

My boys (and by boys I mean my son and husband) love brownies. I, on the other hand, have always had a love-hate relationship with them (the brownies, not my son and my husband). I’ll crave brownies, then bite into one and find it too sweet, rich, and filling. If only brownies could be lighter, yet bursting with chocolate!

These fudgy, gluten-free miso brownies are the answer. They are decadent but a bit lighter and fluffier than your typical brownies. Plus, the balancing miso adds layers of depth and umami.

Serving: 9 brownies | Preparation time: 15 minutes | Cooking time: about 60 minutes

  • 1/2 cup (112 g) softened butter
  • 1 cup (200g) granulated sugar
  • 2 large eggs (about 100g)
  • 1 tablespoon miso, to taste
  • 1 teaspoon vanilla extract
  • 8 oz (228 g) high quality semi-sweet chocolate, chopped
  • 1/2 cup (120g) milk
  • 1 cup (120g) glutinous rice flour
  • 1/4 cup (30 g) Dutch cocoa powder
  1. Preheat the oven to 350°F (180°C) with a rack in the middle.
  2. Line an 8-inch (20 cm) square pan with parchment paper.
  3. In a stand mixer fitted with the paddle attachment, beat the butter and sugar until well incorporated. Add the eggs, miso and vanilla extract and mix until well combined, scraping down the sides of the bowl as needed. It’s okay if the mixture looks oily and gritty at this point.
  4. Melt half the chocolate in a bain-marie or in the microwave in 20-second increments. Reserve the other half of the chocolate.
  5. Add melted chocolate and milk to stand mixer and mix on low speed until incorporated. Sift the flour and cocoa powder. Using a flexible spatula, fold to combine. Do not over mix the brownie mixture. Fold the chocolate pieces into the batter.
  6. Transfer the batter to the prepared pan. Be sure to spread the brownie mixture evenly, covering all corners of the pan. Bake for about 50-60 minutes, until an inserted toothpick (or bamboo stick) comes out clean.
  7. Cool completely to room temperature. Cut into 9 equal pieces.
  8. Store leftover brownies in an airtight container and consume them within a few days.

Point: To change up the flavor of your mochi brownies, try adding a tablespoon of tahini or nut butter of your choice to the batter for a nutty kick.

Crispy and chewy on the outside, soft and gooey in the middle, and filled with indulgent chocolate goodness, this is the quintessential brownie, but topped with vegan cookie butter.

Caramelized hazelnuts add a sweet golden crunch to these gooey brownies from SHELVES! On a budget recipe book.

What do you need:

For the candied hazelnuts:
¾ cup blanched hazelnuts
¼ cup) sugar
2 tablespoons of water
½ teaspoon flaky salt

For the brownies:
½ cup of water
1 cup of sugar
½ cup cocoa powder
½ cup dark chocolate chips
2 medium potatoes, peeled, steamed and chopped
¾ cup sunflower oil, plus extra for greasing
¾ teaspoon apple cider vinegar
¼ tsp salt
1 cup flour
1 teaspoon baking powder
¾ cup Biscoff spread

What are you doing:

  1. Preheat the oven to 350 degrees. Grease a baking sheet with oil.
  2. For the candied hazelnuts, on a baking sheet, spread the walnuts. Bake for 5 to 10 minutes or until nuts are lightly toasted.
  3. In a greased skillet over medium-high heat, add the sugar and water. Once boiling, reduce the heat to medium and add the toasted walnuts. Mix well with a rubber spatula and simmer, tilting the pan occasionally, until the water evaporates and there is a light golden syrup, about 5 minutes. Quickly scrape the nuts onto a greased baking sheet. Sprinkle with salt and let cool.
  4. For the brownies, in a small saucepan, add the water, sugar, cocoa powder and chocolate. Mix well. Put the pan on low heat, folding the mixture with a rubber spatula. Once melted, stir until smooth and remove from heat. Pour into a bowl and let cool until just warm.
  5. In a food processor, add potatoes and blend until smooth. Add oil in a slow, steady stream until blended. Add the vinegar and salt, and pulse to combine. Add to bowl with chocolate mixture and fold until just blended.
  6. In a separate bowl, combine flour and baking powder. Using a sieve, sift the flour mixture over the chocolate mixture and fold together, being careful not to overmix. Pour into a greased skillet and spread Biscoff evenly on top.
  7. Bake and cook for 17 to 20 minutes. Sprinkle with candied hazelnuts and let stand 10 minutes before serving.

On Thursday’s Morning Focus show, Alan Morrissey welcomed newest guest Paul Knapps. Paul is a day firefighter who has a passion for cooking healthy homemade recipes.

Paul is a television cooking presenter who uses both healthy eating and mental wellness in his personal beliefs. Additionally, ‘The Firefighting Chef’ is a public speaker and is currently a current author.

Paul came on the show and baked some delicious vegan chocolate brownies. Its main focus is to cook healthy, eat healthy, and love what you do.

Recipe for vegan brownies:

2 tablespoons ground flax seeds
> 6 tablespoons of water
> 200 g coarsely chopped dark chocolate (divide into 150 g to melt and 50 g to add to the dough)
> ½ teaspoon of coffee beans
> 80g vegan margarine, plus extra for greasing
> 60ml of water
> 125g self-rising flour
> 70g ground almonds
> 50g cocoa powder
> ¼ tsp baking powder
> 250g golden caster sugar
> 1½ tsp vanilla extract

Method:

Preheat your oven to 170C/150C fan/gas 3½. Butter and line a 20cm square mold with parchment paper.
> Mix the flax seeds with 6 tablespoons of water and leave to stand for at least 5 minutes.
> Next, in a saucepan, add water and place a bowl on top making sure the bowl does not touch the hot water,
> melt 150g of chopped chocolate, the coffee and the margarine with 60ml of water over low heat.
> In a large bowl, put the flour, almonds, cocoa, baking powder and ¼ teaspoon of salt in a bowl and stir to remove lumps. Using a hand whisk, stir the sugar into the melted chocolate mixture and beat well until smooth and glossy, making sure all the sugar is fully dissolved. stir in flaxseed mixture, vanilla extract and remaining 50g of chopped chocolate and add to flour mixture and mix well, then we are ready to pour into prepared pan.
> Bake for 35-45 mins until a toothpick inserted in the middle comes out clean with moist crumbs.
> Leave to cool completely in the mold, then cut into squares. Store in an airtight container and consume within three days! As if there were any left…. Enjoy.

  1. Melt butter, 1 pound chocolate chips and unsweetened chocolate together in a bowl over boiling water. Remove and cool slightly.
  2. In a mixing bowl, gently mix the eggs, coffee, vanilla and sugar together. Stir in hot melted chocolate mixture. Cool to room temperature.
  3. In another mixing bowl, sift together 1 cup flour, baking powder and salt. Stir in chocolate mixture. Stir in the nuts.
  4. In another bowl, combine the remaining 12 ounces of chocolate chips and flour. Fold them into the dough.
  5. Pour the batter onto a greased and floured 12 x 18 x 1 inch baking sheet.
  6. Bake in preheated 350 degree F oven for 20 minutes. Tap the baking sheet on the oven rack to release air, then bake for another 15 minutes or until a toothpick comes out clean. Do not overcook! Cool completely then refrigerate before cutting into squares.

“Ideally, if someone has stacks of reusable coffee cups with lids, that would be ideal,” said Foodstory co-founder Sandy McKinnon.

“Take-out containers that aren’t plastic would also be great.

“But that would be in an ideal world and I understand those are things that people like to hang on to.

“Really, we’re just looking for anything we can use in the cafe to serve food and drink.”

Why is Foodstory asking for donations?

Foodstory doesn’t need donations because it doesn’t want to spend the money on brand new dishes.

Instead, the idea behind the plan is to keep old and unused items from ending up in the landfill.

All donated items will be used at Foodstory’s recently reopened cafe in Old Aberdeen, which was previously called Foodstory Zero but has been renamed Foodstory Uni (as it is located on the University of Aberdeen campus).

The original name Zero comes from the cafe’s philosophy of producing zero waste, and although the name has changed, that philosophy remains.

“We only have one bin at the university cafe, which is a food waste bin that is collected once every two weeks,” Sandy said.

“We don’t have any sort of single-use packaging on site, other than the cartons that our alternative milks come in, and we’re trying to find a supplier to get them in glass bottles.”

This means that when you buy a coffee it won’t come in a to-go cup and your lunch won’t be packed in a carton.

Instead, when you buy coffee to go and don’t have your own reusable cup, you’ll receive it in a real mug that you can take with you (and hopefully come back later).

Not the perfect business model…yet

Sandy says the cafe is losing sales due to its reluctance to use any type of disposable packaging.

“If they’re buying coffee to go, some people just don’t want to take it in a cup without a lid,” Sandy said.

“I can understand that and we’ve lost sales because of that, so it’s not the perfect business model.

“But we’re learning a lot from this model and customers are very open to change, especially since covid, and university students are always good at being early adopters.”

You can drop off all items at Foodstory’s main cafe on Thistle Street in Aberdeen or at Foodstory Uni in the Taylor Building at the University of Aberdeen. Your free brownie can be picked up at either location.

Looking for an easy, last-minute chocolate dessert idea that doesn’t require heating up the oven on a hot September day?

Here’s a clever idea that you and your kids will enjoy: make delicious homemade brownies in a waffle maker.

Then, garnish them with fresh seasonal fruits like raspberries or spoon vanilla ice cream on top. Yum!

Brownies in a waffle iron

Servings: 4

Ingredients

3/4 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1 cup of sugar

1/2 teaspoon baking powder

Pinch of salt

1 stick (1/2 cup) unsalted butter, melted

2 eggs, lightly beaten

1/2 teaspoon of vanilla

Procedure

Melt the butter and cool. In a bowl, let your children measure and mix the flour, cocoa powder, sugar, baking powder and salt. In another bowl, combine the butter, eggs and vanilla.

Add the wet ingredients to the dry ingredients and stir with a large spoon until combined, being careful not to over mix as it will be a thick consistency.

Generously spray or brush a waffle iron with oil and set over medium heat. When ready, an adult can pour some of the brownie mixture onto the waffle maker. I use an ice cream scoop. Vary the amount depending on the size of your waffle maker so it doesn’t spill out the sides when closed.

When the batter is cooked – our family likes them crispy on the outside – carefully remove the “waffle brownie” from the waffle maker with a spatula and let cool slightly on a wire rack or plate.

To serve: Sprinkle warm waffle brownie portions with sifted icing sugar, raspberries, a scoop of vanilla ice cream or fudge sauce. Store leftover brownies in an airtight container or in your freezer.

Shortcut idea: use your favorite store-bought brownie mix. I used the Pillsbury Family Size Chocolate Fudge Brownie Mix for delicious results.

Oh, the brownies – chocolatey, gooey, and always delicious. While brownies on their own have earned a spot in the top dessert category, there’s no harm in giving them a shine. Mouth watering? We’ve rounded up 3 tasty ways to upgrade your brownies below.

Each of these glows used the same mix of boxes. We used Ghiradelli, but whichever brand you prefer, it works great.

1. Brownies S’mores

Perfect for (but not limited to) summer szn’s, s’more brownies take all the good parts of a s’more (marshmallows, chocolate, graham crackers) and leave all the messy parts behind (sticky skewer , hungry mosquitoes… No thanks).

Prepare your brownie mixture and transfer it to a pan. Then scatter your marshmallows on top. If you’ve opted for the standard s’more-sized marshmallows, use kitchen shears (or your fingers) to break them into pieces before scattering them. Next, separate some honey graham crackers (the smaller the better!) and add them on top.

If you’re craving some ~extra~ chocolate, grab a Hershey’s bar, break it up into smaller rectangles, and toss them on top as well. Follow the cooking instructions on the box, let cool and enjoy! Don’t forget to hit the movies or pick up your ukulele to keep the camp vibe going.

2. Raspberry Brownies

There’s something about a fruit and chocolate combo that’s oozing with fantasy. Rinse your raspberries and set them aside. Once your brownie batter is prepared, take 1/2 of the raspberries and gently fold them into the batter using a spatula. Transfer the mixture to the saucepan. Cut your remaining raspberries in half vertically and place them cut side up on the dough. Follow the cooking instructions on the box, let cool and voila! Sprinkle powdered sugar on top to keep the sleek vibes.

3. Peanut Butter Brownies

Peanut butter and chocolate, can you go wrong? Prepare your brownie mix and pour it into the pan. In a separate microwave-safe bowl or mug, take a mug (or more, if you’re a big PB fan) and microwave for about 15 seconds, stir the mixture with a fork, and pour it out on your dough. Using a toothpick or skewer, gently stir in the peanut butter, creating a fun marbled pattern as you go. Follow the cooking instructions on the box, let cool and enjoy! Who needs peanut butter cups when you have PB brownies?
